Just a few minutes from the A1 in north Nottinghamshire, you’ll find award-winning hotel Ye Olde Bell, which has recently also been awarded an AA Rosette in recognition of its fantastic dining offer.

Richard Allen is the Restaurant & Bistro Head Chef, and it is his passion for fresh local produce and memorable dining experiences which has enabled the hotel to secure its new Rosette award, although Richard is quick to stress this doesn’t mean the hotel is out of anyone’s league: “Although we’re very proud of this achievement, we don’t want people to feel intimidated by it or feel like we’re the kind of place they can only visit for a special treat. When it comes to local produce, Ye Olde Bell is proud of its locality and Richard and his team work closely with their suppliers to source the best ingredients, giving a taste of Nottinghamshire. Local delights appearing on the menu throughout the year include Nottinghamshire Bramley apples, Stilton cheese and prime Nottinghamshire beef. Richard says: “The most important things in cooking are the quality of the ingredients and fresh local produce, combined with consistent standards and execution. The team here works as a whole, which ensures we put ‘personality on the plates’ and our guests continually return and recommend.” Richard joined Ye Olde Bell as Restaurant & Bistro Head Chef in 2014, and is originally from Nottingham. He’s been a chef for 17 years and has worked in some of the best restaurants in the country throughout his career. He is passionate about giving a new generation the opportunity to learn the trade, and says, “Apart from achieving more accolades and continually improving the product, my own personal ambitions for the future are my trainee chefs. There is nothing better than having a young individual join the team and to train and watch their development.”
